Job Description:
Position Summary General Summary: The Dough Mixer mixes dough
ingredients according to the formula and production schedule. This
position is responsible for the dough consistency, temperature and
texture to meet customer specification.
Position Essential Duties and Responsibilities Essential Job
Functions:
Pre-check equipment to insure proper operation and make adjustments
as appropriate.
Starts machine and moves controls of equipment to set speed of
grinder in order to produce proper dispensing of textures (mixture
cannot be too coarse, fine, wet or dry).
Cook texture to customer expectation.
Keeps adequate product supplied to the machine (failure to run out
of ingredient may cause stones to burn).
Stones must be set properly to deliver good texture of ground
masa.
Monitors equipment for mechanical problems, such as making sure the
water valve supplying the mixture are in their correct position,
making sure the main water line is open to the mixer, testing water
meter for weight accuracy and calibrate weekly or as needed and set
the desired batch weight of water on the water batch control
panel.
Coordinates product flow with Production.
Maintain clean work area.
Must stay within assigned work area.
Responsibilities often require overtime, and weekend hours.
Must be able to effectively communicate with team members of all
job levels.
Other duties & responsibilities as assigned.
Position Qualifications Essential Skills and Experience:.
Must be able to push, pull, reach in place, bend and use proper
lifting techniques
Must have general knowledge of equipment used in designated
area.
Ability to comprehend Hazard Analysis Critical Control Point
(HACCP) requirements and procedures.
Follow Company policy, Standard Operating Procedures (SOP's) and
Good Manufacturing Practices (GMP's). Reporting to this position:

While performing the duties of this Job, the employee is regularly
exposed to wet and/or humid conditions and moving mechanical parts.
The work environment may be noisy, dusty, slippery, hot or cold,
depending on the particular product and manufacturing processes
being carried out. Workers are required to regularly wash their
hands with anti-bacterial soap and sanitizer, wear protective
clothing including hair nets, gloves, masks and overalls, which
will help avoid contaminating products. Physical demands: Frequent
use of hands to finger, handle, grasp or touch objects and tools.
Frequent standing, walking, climbing, squatting, stooping,
crouching, twisting, bending and reaching. Frequently lift and/or
move up to 50 pounds. Work in hot environment of 80-100 degrees
Fahrenheit for extended periods is likely. Specific vision
abilities required by this job include close vision, distance
vision, color vision, peripheral vision, depth perception and the
ability to adjust focus. Ability to smell and sense for good
product and feel for good texture. The physical demands and work
